It’s been a while since I’ve done one of these, but I love sharing my meal ideas because it keeps me accountable for the week Plus, since finished Financial Peace University, we are making a concerted effort to eat more meals at home. We didn’t eat out a ton…but when you don’t eat out hardly at all, all of that money goes straight back into the bank account!
So, what are we eating this week? Well, I’m trying to get my picky eater more involved in the cooking process, so we are eating easy things that she can help with. Here’s our weekly lineup:
Monday: Homemade pizza night- I love making pizzas at home because they can be made small enough for my little one, and more personal size for me. I usually get my dough in the freezer section at HEB. I’ll try to remember to take a picture of it, and post it on Instagram tomorrow so you know where to find it! I usually buy sauce, cheese, and a few toppings and let the family make what they want. One crust is usually enough to feed our family of 4.
Tuesday: Fajita Tacos- I’m going beef and chicken, sauteed onions, and toppings. Taco Tuesday for the win!
Wednesday: Baked Pizza Pasta Casserole- Wednesdays are busy days for us, so I need something I can make in the morning, pop into the oven, and voila! I got this recipe out of this cookbook, which my daughter loves. She will also enjoy helping me make this recipe
Thursday: Leftovers- Thursdays are also a busy day for us, so I’ve declared them to be my no-cooking day.
Friday: Burger night- My new favorite night is burger night. We do burgers, and I’ve started adding sausage (thanks HEB cooking connection for getting me with the yellow coupon!). I’ll do sweet potato fries and a salad. I’ve started experimenting with different salads…usually finding my recipes from my favorite Whole 30 Instagram accounts.
Saturday: Dinner out…I figure I can let someone else cook for us at least one night a week 😉
